Are we to the "LabVIEW" part of this discussion yet? Maybe it's best moved to the Instrument Control (GPIB, Serial, VISA, IVI) board?

Yes. You still need the LabVIEW driver so that you can talk to the instrument. All we are recommending is using the Ethernet cable instead of a GPIB. The driver won't care since it should be written with the VISA API which abstracts the actual communication bus from you.
