E series should be all but deprecated by this time.  It is an older series that has been around longer than I have been using LabVIEW (13 years).  It was replaced with the M series.  The M series boasted more COTS parts, making them cheaper and with higher acquisition speed and/or channel count.  I have not had to do any research into the X series, but my memory thinks it was just the next evolution after M series.

S series were made specifically for synchronized channels, meaning multiple A/D in order to have the samples done at the exact same time.

cDAQ is just a completely different architecture.  The E, M, X, and S series were PCI(e), PXI(e), and USB cards.  cDAQ is a modular architecture allowing you to use modules specific to what you have to measure in a fairly small chassis.
