I would like to sample multiple channels using different sampling rates continuously and simultaneously. Is this possible? If yes, then how do I combine the channels measurements together in a graph?

No, all channels on the 6366 share a sample clock.

 

You could sample fast and then decimate a subset of the channels in software if the concern is too much data.
