Extract plot data in excel

Hello,

Does anyone know how to create a program to extract x and y coordinate data from a plot after defining x and y axis start and end points? for example digitizing a plot.

What do you mean by "plot"?. Is the "plot" in excel? Printed on paper? A picture file? Somethings else?

What programming language do you want to use to extract the data?

A picture/jpg file. for example, attached is a plot with x and y coordinates with red line. I want to extract points for red line so i can recreate the plot and generate equations or understand the data for specific reading on x axis or y axis. I was hoping there is a way in LabVIEW to extract all the data points for the red line in an excel sheet output.
