There are many examples of LabVIEW's use in pharmaceutical and other biomedical and even clinical medical devices.  I would first try putting "FDA" into the search box at ni.com to get a range of relevant articles and topics, ranging from CFR 21 part 11 discussion to Alliance members that can help develop compliant applications.
