If you need to display three plots in one graph, right-click on a graph, select Properties -> Appearance and change the "Plots shown" value to 3. Then bundle three data flows and wire it to the graph in your block diagram.
And what exactly do you mean by "control of velocity"? Do you have delay in mind? If so, use "Wait Until Next ms Multiple" vi from the Timing pallete and wire a control to it.
