What DAQ device are you using to measure the voltage?  It can be as simple as applying the appropriate scale either in MAX or in the setup of the channel in LabVIEW.

The DAQ device is a NI USB-6212 , 16 inputs, 16-bit, 400 kS/s, Multifunction I/O.

The datasheet for that sensor shows a very linear curve for that sensor. You should easily be able to create a scale in MAX or the setup of the channel in LabVIEW as Ravens Fan indicated. Please consult the documentation on MAX and DAQmx on how to create scales.
