measuring three voltages simultaneously

Hi,

    i am having an array of nano thermocouple,ihave attached a schematic diagram. suppose when i passing a current ,say 1 mA through the heater, it will start generating heat. my problem is the measure the corresponding voltage with respect to time,to see at what time the voltage get saturated. again i want to increase the current and measure the same. so i want to measure the three inputs simultaneously with respect to time and i want to take the measurement each time when i change the current.i am using USB
