can anyone tell me how to create the variable "message" in this block diagram ?

That's how local variables used to look. Right-click on the messages indicator Create > Local Variable.

I find it easiest to use the front panel.  Right-click on the "message" control and select Create->Local Variable.  You can also use the control's terminal.
