I must assume here that you are using a DAQ card to get the data into your PC. From here I suggest using a built-in example for LabVIEW called Cont Acq&Graph (buffered).vi. This example allows one to read multiple channels and plot them on a graph. If you want the three colors you describe, then you can change them by right-clicking on the plot legend and changing the plot colors. (You will also need to change the plot backgroung color away from black using the Coloring Tool.)
