The LabVIEW mobile module is considerably different from the desktop version in several ways, one of which is its user interface. You don't see those things because it doesn't know how to display them. The control used for this in the mobile module presumably does not have these options.

Comparing to the NI products for displaying data, we've chosen a touch panel PC (with Windows XP) instead. 

It will save you lots of time.
