Plot data with specific timestamps

I acquire numeric data from an instrument and I get the timestamp of when that data was acquired. I then build arrays for each acquisition.

I want to simply plot the data with its corresponding timestamp. I want the X-Axis to be a readable timestamp and not some value in seconds.

Set the display properties of the X axis to show time.

Right click on the graph, Xscale >>  Properties >> Display Format.
