Labview

I am just learning to use Labview. I am trying to use it to input an
analog signal, perform some manipulation of the signal and send out an
analog signal. Does anyone know where I can find any useful sites?

I'd say the best place to start with this kind of application is the
examples that ship with LabVIEW. Do Help >> Search Examples, then follow
the Data Acquisition and Simultaneous Analog I/O links. The first
example I see (Analog I/O Control loop (immediate)) is a good one for you
to start with.

In the not-so-distant future, you will be able to search and/or navigate
through lots of shipping examples and lots of additional non-shipping ones
from the NI Web site. In the meantime, there is an extensive, searchable,
non-shipping ex
ample programs database on the NI site already.
