Labels can not be changed at run time.

Captions can be changed.

Make sure that the property "make caption match label" is not set.

The label is the data name which shows up on the diagram, in bundle and
unbundle nodes, whereas the caption is simply a front panel name. It is
primarily there to allow for localization so that it will not affect the
diagram, and since it isn't a part of the datatype, it can even be
modified at runtime.
