There are examples that are installed with LabVIEW when you install DAQmx. You should start by looking at those. These examples included performing a buffered data acquisition as Norbert mentioned.

This is completely dependent on your protocol, and not LabVIEW. In other words, you have to look at the protocol specification for the device you're talking to it. It will tell you what gets sent.
