I understand how to have the Agilent 82357B GPIB USB work in Labview.
However, my interest is to use the LV's IO Assistant, does this one work under the said Agilent's GPIB-USB converter ?

About the LV's IO Assistant, do you mean the Instrument I/O assistant?
You can use this assistant to communicate with message-based instruments and graphically parse the response
