It all depends on what kind of sensor you have really. The 6009 will take in an analogue voltage difference from 0 through 10 Volts but this analogue signal could be from any kind of sensor.
Thermocouples will generaly need cold junction compensation and then both they and strain gauges should have some kind of external amplification. You will probably be able to read somthing, measuring a variation with these signals should be ok but I would look seriusly into what resolution you need as the accuracy of your results will be low.
What kind of a pressure sensor do you have what is its voltage output?
had you thought about using the digital lines, set up a counter for example.
