This code is running on the cRIO, correct? If so, it will not be saving that file into your Laptop, but into the cRIO itself.
As such, if you need to have the file in your computer, you will need to have some code running in your computer to read from the variables, and the code in the cRIO simply to write to those variables.

Just to follow up. I do so dislike postings without endings...
Using the Beckhoff stuff worked for me. LabVIEW didn't map the EtherCat motors to device numbers as expected and the coupler itself shows up as a device, but I just ignored it and It has been working reliably. Beckhoff now has the EtherCat switch available now.
