160 mm / 0.02 mm = 8000. Your Image needs to be (at least) 8000 x 4000 = 32 M pixels. Most video cameras seem to be an order of magnitude lower pixel size than this. While you could try to "stitch together" multiple images, you would be trading a single-image-resolution problem for an image-alignment problem. Basler seems to make a few cameras that should give you 0.05mm precision-- you might find others.
