You are not able to select Log from the Operate window when a VI is running.However you can programmatically log the state of the front panel when the VI is finished.You can do this by placing a VI Server Reference on your block diagram and creating a property node for the VI Class.You will find the Log at Finish property under the Auto Logging section.
If you would like to store front panel values during execution, I would recommend writing to a file.I hope this helps answer your question.

Writing to a file is not as elegant, especially for looking at things later. Perhaps saving an image is the way to go - disk space is pretty cheap these days 😛
