There are many different question to concider and I don't have all the answers. Though I can tell you that RT or not depends on the operating system installed on your computer and Windows is definitely not a RT operating system. Also about RT, usually people think that RT is reserved for very fast applications and this is not necessarily true ; RT is the answer for systems that have to run
continuously for a long time and
at a constant rate, which
can be low.
Also, for your application, DAQ boards have a memory buffer and a maximun acquisition frequency, so you can set up the board to aquire fast and then your LabVIEW application can read the boards buffer for instance every 100 or 200ms, you have to determine your frequency acquisition (1/500e-6 Hz >> 2000 Hz), then multiply by the number of channel and type of data to get the data flow and eventually see if it fits in the buffer.

😉BTW, I don't think that the LabVIEW version really matters... or maybe just about compatibility with USB devices, but technically even LV 6.1 would do the job.
