What can Labview do for me??

New to Labview. I am getting a demo version soon and plan on getting the latest version shortly therafter. I am looking for a simple data acqusition system (high speed) from signal conditioner to plot (example: 18 strain gages, one t/c and 1 accel) to record a 30 second test at maybe 10,000 pts per second. I was going to get some 2310's from Vishay (what board would I need and would the labview software alow me to plot the data in stress /strain (ablt to generate modulus, etc).
If labview and the NI card and the 2310s wont allow me to do this then I was going to get the Vishay 6000 system from measurementsgroup.com.
But I wanted to learn labview and incorporate it in my new data system. Can Labview walso work with th
e Vishay 6000 system???)

I developed a system very similar to what you described a few years back. I believe we used 5B modules for the signal conditioning. SCXI is one of my favorites, but it can get a little expensive. There are other options available also.

It might be useful for you to have a contract programmer write your code for you. You will learn a lot from the code, and your system will work much better than if you try to put it together from scratch without any experience. The NI classes help some, but there is no substitute for years of experience.

I am not familiar with the Vishay equipment, so I can't help you there.
