I´ve been trying to acquire 2 signs with two different DAQ Assistants in the same task. According to what you just had said, it´s not possible to do it.So the main problem here is lack of knowledge, I guess.
Reading other topics, I found this:
"To select mutiple channels you can shift+click or ctrl+click in the Add Channels to Task window.
When using the DAQ assist, you will still receive a single output for your data (Dynamic Data datatype). If you connect this into an indicator, all of your channels will display on the graph. If you needed to do processing on an individual channel, you can use the Select Signals or the Split Signals Express VI. Both of these can be found in the Express >> Signal Manipulation pallette."
I think it might be the solution for my situation, what do you think? I have to wait until tomorrow to make the test with the 6008, because it´s located in a department of my university which limit the time of the use of it so I would like to go 100% percent sure about the situation, in order to avoid wasting more time.

You should definitely acquire all the signals of the same type using the same DAQ assistant (I believe it will even use multiple devices and synch them as well as possible).
I would change the dynamic data type to its actual data type as quickly as possible (use the From DDT Express VI, it is very efficient). If you are taking waveforms, convert to waveforms (or array of waveforms if taking multiple channels). If taking single data points, convert to an array of single data points. That way your actual data types will be explicit and you will not accidentally run into problems trying to do something with the data that makes no sense (like taking the power spectrum of single data points).
