Hello,
I need to find out if:
1) Can LabVIEW graph RTU/Modbus output Temperature vs Time
2) Convert RTU Modus output from temperature controller to 0-10 V or 0-5 V output, and plot it as Temperature.

Well, LabVIEW is a general purpose programming language, not just a turnkey solution. Start with some tutorials.

There are a few ModBus libraries floating around that you can use to get your data. From there, it is simple math to get your engineering units.

Remember LabVIEW is a programming language. If you are asking yourself if you can do something in LabVIEW, ask yourself if you can do this in C? Or VB? If the answer is yes then (in almost all situations) you can do it in LabVIEW. By the way the Class based Modbus code from NI is the ones I typically use which I think come with LabVIEW RT, but maybe also the internet connectivity toolkit.
