How to scale a voltage signal on an accelerometer

I am trying to get an accelerometer to ready properly in Labview sans the vibration and sound measurement suite.  My config is as follows:

- Labview SignalExpress 2012

- CompaqDaq with NI9205 board

- Using a triaxial sensor with x, y and z (each with a different sensitivity)

 

A question on how to get correlation of the voltage I am reading from the output of the sensor maker's signal conditioner (+/- 5V).  I have been trying to use the custom scale function (linear) but am running into problems in trying to get the relation between sensitivity and voltage for the slope. Can someone give me a generic description of steps to calculate/setup assuming the variables I've stated.

This isn't the Signal Express board but I know you can just use:  Add a Step > Processing > Analog Signals > Scaling and Conversion

 

Just set the gain and offset so you get the linear function that you need to scale each sensors voltage to acceleration.  That should be in the sensor manual.
