I thought I would put some information up for reference. First off, the base LabVIEW 2011 Pro package installer will fail unless your Mac is booted in 32 bit mode. To do so, restart and hold down the 3 and 2 keys after you hear the startup chime until the login screen appears. Run the base package installer again and everything should go fine. After the installation finishes it will ask you to restart and you'll notice that if you boot in 32 bit mode, your computer will crash before it gets to the login screen. The culprits here are the following kernel extensions: com.ni.driver.nipalk(2.6.5) and com.ni.driver.NiViPciK(5.1.1). These are part of an older VISA driver not compatible with Mac OS X Lion. Boot up you computer in 64 bit mode which, if its not the default, can be done by holding down 6 and 4. Download and install the experimental VISA 5.1.1 driver from here. Finally, if you install addon's such as the Internet Toolkit 6.0.2, you'll realize that this installation fails as well. This is because it's trying to install these VI's into the LabVIEW 8.6 directory, which since were on LabVIEW 2011, doesn't exist. Rerun the installation, manually chose the install location, and select Applications/National Instruments/LabVIEW 2011.
Let's hope that LabVIEW 2012 has a cleaner installation process on Mac OS X.
