I am new to LabView. This might be a stupid question but how do you build an array? I think its suppose to be really simple and that I am just missing something. Explanation or an example would be much appreciated.

To learn more about LabVIEW it is recommended that you go through the tutorial(s) and look over the material in the NI Developer Zone's Learning Center which provides links to other materials and other tutorials. You can also take the online courses for free.
Reading the LabVIEW Help also works. Try it.

What is useful to you depends on your application but what is often a faster and more memory efficient move is you
or
iterate over all the values in a for loop or while loop using auto-indexing
or some combination of approaches.
It might be helpful to look at all the array functions.
