One of the easiest ways to simulate data is the Random Number (0-1) function in the Numeric palette. To simulate the data in a particular range, just do some math on the random number.
Without a more descriptive post from you, or perhaps a sample VI demonstrating what you're trying to accomplish, this is the best answer I can give for now.
