Creating:
There are 2 functions in LV to build a histogram - "Histogram" and "General Histogram" - in "Functions->Math->Probability and Statistic" palette. The last one is much more flexible but is not available in the basic LV package (Advanced Analysis package required).
Take a look in the help available in LV concerning usage of those functions. If only "Histogram" function is available then creating a histogram with fixed interval will be a little tricky but not impossible. Ask if futher recomendations are needed.
To display your histogram I suppose using the XY Graph indicator which is set to plot bars instead of dots/lines.
