What data acquisition equipment is better to measure the deformation of an object with a strain gauge?

If you're wanting to use NI equipment to do this, the best thing to do is call your local NI office and speak with a sales rep. They'll be able to give you an overview of your options.
As a handwaving guide, you're going to want to measure a voltage, so any analog input device in principle will work. However, be aware that your voltage without amplification will be very low (perhaps unmeasurably so with cheaper DAQ devices and lower resolutions).
Possible solutions to this include
a) buying a very high resolution DAQ device. Not the appropriate solution, because you'll still have a much worse result than with other methods...
b) amplifying the signal using some external amplifier
c) buying a device specifically to measure Wheatstone-bridge configurations.
