Is it possible to burn labview code in an ARM 7 evaluation board so it can work as a standalone system? If yes, what module to use and what other requirements are there? Also, is it possible to acquire data using the analog input pins of ARM 7 and use the data to program?

In short - not really. NI had the ARM development module but it only supports a handful of development kits and I'm not sure it's even a current product any more.
The next closest thing I can suggest would be to look at the Single Board RIO (sbRIO) or SOM (System on Module) hardware that NI produce - they are small form factor CompactRIOs.
The other thing that might be worth looking at is the newly released LabVIEW compiler for Arduino - it allows you to write LabVIEW code and compile it as a sketch to an Arduino.
Might be worth talking to your Local NI Sales office to see what suggestions they have.
