You can use the Get DAQ Channel Names VI which will return an array of the current valid channels configured in Measurement & Automation Explorer. Based on this information, you can decide which channels to acquire and then display on your LabVIEW strip chart. The VI was introduced with NI-DAQ 6.6 and is available to LabVIEW 5.x and 6.x users.

The order of the names in the output array from Get DAQ Channel Names is the same order in which they were created - I often sort this array so that the channels are in alphabetical order

Where can I find "Get DAQ Channel Names.vi"? I search in the examples that ship with LabVIEW.

The VI is not an example, it is installed in the DAQ palette when you install NI-DAQ. The VI can be found in the Data Acquisition palette. I don't remember the exact sub palette it is located in (something like signal conditioning/utilities) and inside of there is another sub palette call DAQ Channel Names. I unfortunately do not have access to a computer with LabVIEW on it today - sorry I can't be more specific. It is not in the following palettes Analog In, Aanalog Out, Digital I/O, Counter - I hope you manage to track it down.
