LabVIEW 7.1.X is the only version of LabVIEW you can use to develop custom blocks for the NXT-G programming environment. If I remember right, the Student Edition in this version has a non-expiring license. So, any work you've done in that version will certainly be preserved and you can take all the time you need to learn how the software works.
I'm pretty sure that your 30-day evaluation period only applies to LV 8.5. When that license expires, any work you've done in 8.5 won't be destroyed, but you also won't be able to open any of those VIs until you either purchase LV 8.5 or are granted another evaluation period. Migrating any work you've done in 8.5 back to 7.1.1 would be very difficult.
My recommendation to you is to maximize your remaining license time with LV 8.5. Stop trying to develop custom blocks for the time being and instead, explore how using the NXT Toolkit can help you program your robot in LabVIEW instead of in NXT-G. (Keep in mind that any work you do will be frozen when the evaluation period expires; sorry, but that's the way software marketing works.) When your evaluation period is up, you can switch back to 7.1.1 and return to the task of developing custom NXT-G blocks. If you find that 7.1.1 is powerful enough for you, great. But if you end up missing some of the features in 8.5, or you wish to reclaim some of the work you did in 8.5, maybe you'll consider purchasing a full license.
