There are countless devices that can do this. What you use will depend on a large number of factors (cost, number of channels, accuracy, speed, etc). I noticed in anther post of yours that you were asking about the capabilities fo the USB-6008. With the appropriate sensors and signal contitioning, it could do all of these, though I don't know what immunity data is. This would be a custom hardware/software solution. You can go to the opposite end of the spectrum and buy off the shelf instruments that do all of this.
You might want to spend some time trying to better define exactly what you want and need. The 'how high is up' sort of questions are pretty difficult to answer.
