What is the highest performing HSDIO Pattern Generator?
And what is the difference between the PXIe-6570 and the PXIe-6571?

FYI - none of 657x is an HSDIO, these are Digital Pattern instruments which are different from HSDIO.
To answer your question for 6570 and 6571, the main difference is the active load current is limited to 16mA on 6571 compared to 6570 and you can install 6571 only in a 58W capable chassis whereas 6570 can be installed in any chassis with a PXIe slot.
In short, if you don't care about the maximum active load current and you have a high-power chassis like 1095, using 6571 will save you an additional slot and gives you the same performance.

Then why when I look up NI Examples for HSDIO in LabView 2020 I get a list of Pattern Generators like PXIe-6551, PXIe-6552, PXIe-6570, PXIe-6571, has the definition of HSDIO changed?

That could be a bug in tagging examples, please post a screenshot of what you observe.
657x series use NI-DIGITAL driver and the 655x series use NI-HSDIO driver, completely different items at hardware architecture and driver architecture.
