Does anybody know how to connect a projector to LabView 7 Express?

Your question is too vague. Different projectors have different capabilities and I/O ports. Does it have a serial port? Does it have a USB port? If it has a serial port do you have the documentation on the communication protocol? If it has a USB port does the vendor provide a driver for it? Does the vendor provide a program for the projector? What are you trying to do with the projector?

    I need to display images in that monitor. I have them as png files so to get them I can use the vi called "Read PNG File", but idk how to use the image data to display it on the other monitor (and only the image, centered in a black background if it doesn't fit)
