The 2503 can be used as a DEMUX, when the topology that is used is a matrix. This kind of topology can also be used to create a Multiplexer (even if it is not a very efficient way to use it as far as resources go).
You can expand your Mux topology to become a 96x1 1-wire using 2 2503 modules, 2 2605 Terminal Blocks and an analog bus extender.
As far as examples go, it actually depends on the Application Dev Environment you are using, but once NI-SWITCH Driver
is installed, you will find a whole set of examples just by selecting
Start>>Programs>>National Instruments>>NI-SWITCH>>Examples
Also you should be looking at the NI-SWITCH Online Help (.chm file) which documents everything you can actually do with your switch modules.
