Generally thermocouple measurements would require relatively high precision (mV range signals), and do not require a particularly fast sampling rate. We typically do not recommend using a DAQ board alone for thermocouple measurements, as the readings are more accurate if some additional gain is applied to the signal before it comes into the board. SCXI or other signal conditioning methods are good for this. However, if you absolutely must use a DAQ board alone, the PCI-MIO-16XE-50 would be a good starting point.
