For more beginning stuff try: ISBN 0-13-032559-7 (Robert Bishop). This one has step-by-step tutorials which is good for starting off.
For More advanced stuff, try ISBN 0-07-913666-4 (Gary Johnson), also, there are a few others by Gary Johnson that will certainly suffice - just search for them.
Also, on the WWW - search for Labview + Tutorials.

I always recommend "LabVIEW for Everyone" by Jeffrey Travis as well as Power Programming by Gary Johnson. Excellent resources. With them, I managed to get started by learning LabVIEW in a week!

I also recommend taking NI's Basic courses, as well as the advanced course (I only took Advanced, and wish I had taken the basic courses.) NI has a few options for training, including self-paced courses. These are an excellent alternative to the courses, which are somewhat expensive, though worth the price.
