How can I convert the speech to text using the external microphone and the arduino interfacing board?????

Adruino can not convert text to speech on its own. But there are several (inexpensive ) stand alone boards that would take a text (sent to them via serial communication) and convert it to (decent) speech.

You'll need a Speech Recognition library and database.

Try searching for "Speech Recognition" or "Voice Recognition". I've found libraries for Windows+LabVIEW, but I haven't seen any for Arduino+LabVIEW... (I don't think an Arduino has enough memory to do speech recognition, actually)

So can you suggest any way to convert the speech into text in Labview or using any hardware with the labview????
