The AD595 with the thermocouple is an Arduino issue. If you don't know how to use them, go ask on the Arduino forum.
The main way to communicate between the Arduino and LabVIEW is via serial port.
You can use LINX if you don't want to learn how to program in C++ for the Arduino.
