The sampling rate that you mentioned (250ks/s) is possible to perform on a LabVIEW programmable blackfin. We have realized many projects at this rate. However, like with many "LabVIEW on Microprocessor" approaches, you should also keep in mind the time the processor needs to really process the data. In one project we have even sampled 1MHz with LabVIEW on blackfin, however with one block after another and not in a continuos manner. That's why I doubt that a blackfin with LabVIEW embedded can handle your 80 channels. If you think using a blackfin because you need some kind of deeply embedded hardware, I sugget to look at the new SBRIO 2.0 which is pretty small. With that you get the power not only thanks to the FPGA but also the "horsepower" that comes with the realtime floating point processor.
