I've been able to do this with a single device.. When I have a multi-point network, how do I differentiate each device on the 485 network (read/write)?

Generally, any devices that are designed to be put on an RS-485 multi-drop network have some sort of addressing scheme associated with them. One device might be address 1, another address 2. It is usually something you set in the configuration of the device. The communication protocol will include the address as part of the data stream so that the devices know which messages are meant for them.

Yes, it's possible. I have successfully been using this serial converter.
