I work temp contract jobs.
How do I best make use of the time between jobs?
I find that I learn best when I am actually working on a project not learning for learning's sake.
I have been toying with the idea of learning Python, but no project to use it with.
Any ideas?

Look for a job.
I spend a lot of time in online training and over on the certification board. Network with recruiters and enjoying time with the LMB.
Of course, I have nearly unlimited training access as an alliance partner.
With simulated devices any project is possible. So, write some requirement and build it. Then, find a partner to provide feedback. THINK present to a LUG. Or, ... well, there are some things I could say offline.
Hint, look down.

You could always FIND a project to do with Python. And then do a LabVIEW 2018 wrapper around it.
For example: http://www.toptechboy.com/using-python-with-arduino-lessons/
