Hi,
I'm new to NI equipments. Which hardware configuration should I setup in order to output 1uV - 1mV range to simulate EEG signals?

To simulate EEG signals you need multiple analog output channels ... 8, 16, 32, 64 ???
The bandwidth is quite limited (less than 1 kHz) , so any hardware timed analog output will do it.
Hardware timed IO is important if you want to create reproduceable sequences on all channels at the same time.
The output voltages are quite small µV to mV, and the output impedance of a human head differs from the commercial available standard output anyway, so will need a dedicated output simulation circuit, that can to the attanuation from 5-10V to µV. But I'm shure there are tons of papers on validation and certification of EEG-system..... well, or at least some 😉
