Application engineers 😄  they hear/read a buzzword and didn't found out, that these sensors behave more like a strain gage with 10V supply and ~5V input range. It's a DC capable semsor

It would have been better to provide a datasheet 😉

However I assume you want to connect an ENDEVCO 7290 Sensor ....

Differential or SE output? 

what type of DAQ?   USB, PCI PXI ...       bandwidth doesn't seem that high  ...
