HOW to change color image to R/G/B as 2D matrix?

I just want to transform a color image into 2D matrix so that I can use Matlab to deal with it.

it is impossible to convert rgb to one 2d  array you should first spreate them into 3 plane of rgb and then convert them to array as grayscle type
