I need to measure displacement (angular or liniar) of a mouse wrist joint when applying extenal pulling force (also to measure), in order to build force- displacement curve. Any ideas on sensors I can use?

This is to measure muscle tone in spastic experimental animals.
Amount of force is several gramms, displacement - 15-50 degrees, or can be converted to liniar

Check out the FT03 (Force Displacement Transducer) from Grass. It requires a DC amplifier however I believe it should work for your application.

If you do decide to go with this I would suggest the CP122 DC amplifier and don't forget to get a powersupply for it as Grass complicates things by selling them separately.
