I'm going to need a second example to understand this. How do you determine the yellow areas? How does that then become the 1d array in step 3? Also, is the process in step three to just add three consecutive number?

I see this is your first post, so you may not know that this is not a "Do My Homework For Me" forum.  However, there are useful resources here to help you to learn LabVIEW, starting with the list of Tutorial options on the upper right of the first page of the LabVIEW Forums.  In order to get benefit from the tutorials (and, for that matter, from your class), you need to "do the work", and need to spend some time on it.

 

If you make an honest effort and "get stuck", feel free to return, post your code (this means "attach the VI that you have written" (don't bother attaching a picture of the code, we want to see the actual VI so that we can run it ourselves) and explain where you are having difficulty.  We will do our best to help (and teach) you.
