I'm not 100% certain of this, but I believe AVI is a "container", and that NI allows you to specify the Compression Codec you'd like to use.  An example in LabVIEW is called AVI Codec Comparison -- I can't run it on this machine (no camera, not set up for video), but something I found by Googling LabVIEW AVI Compressor Comparison showed an entry marked "Uncompressed", so this should be possible.

 

If so, you don't have to do any "work" in saving the data -- it will be in an Industry-standard format, which means that you can play the files using any software capable of reading AVIs.  Of course, the files will be significantly larger than their compressed bretheren, but you'll have all of the biological data preserved.
